1,300 Pelmeni
« on: January 18, 2009, 10:12:15 PM »
My wife and I spent the day preparing pelmeni. In total we prepared 1,300 pelmeni and it took us close to 7 hours. We must have close to ten pounds in all. Now, they are all safe in the freezer. We have enough to last us a few months. But, it is worth the effort. I love pelmeni. Do you guys cook with your wives? It is good bonding time.

Misha, congratulations!

We love pelmeni but probably not so much as your wife and you do  :)

Are you going to open a pelmeni store?  ;)

Pelmeni is our fast food. If we are in a rush or are too tired to cook, we boil some water and cook some pelmeni.

Marina and I walk down to "Kalinka" or "Gastronom" (local Russian Grocery stores) and buy ours.

If you don't mind me asking, what kind of meat did you use?

We have no Russian store so we have to make our own. Much cheaper to make our own as well.

I used to like pelmeni as a kid but then I got sick of them and I haven't had any since.. Most of my folks love them, though, with different spices and stuff, and I even have one family member who eats them every single day.. Go figure.. :-\

WOW, 1300 pelmeni! That is a lot!  :D
You guys really love it.
We also love pelmeni with mr.Shadow. Sometimes I cook it, but usually we take from "Berezka" - Russian shop in Rotterdam.

BTW pelmeni is a heavy food. So be careful about your weight if you like to eat it a lot. :D
When I read experiences I think I came from another planet or from future  :D

Hello Misha.

Consider this your "Golden Opportunity" for success!  ;D

Why don't you and your wife open a Russian Store in your neck of the woods?

I wish I had been the "first" one to open a Russian store/supermarket here in Miami.  :cluebat:

I would be a multimillionaire.  8)

We usually boil them with "vegeta" and mix in some of our homemade sour cream/kefir.

Do you have one of these? (see image) Makes the process of making pelmeni so much easier. Still, by the end of it, I was happy to have finished. I was likely still making pelmeni in my dreams LOL.

We don't really have a large Russian community (a few dozen people at most). Was thinking about the local Farmer's Market. It would be easy enough selling homemade goods. We would, however, need a better freezer that can freeze goods faster. However, one day of pelmeni making every few months is enough for me. I am not too sure I would want to do every evening/weekend  :)

I spent some time yesterday runnng the food processor for borsch---she makes it at least once a month
Like you said, bonding time, getting in each other's way, just talking

Pretty much. In the end, it is the little things that count. Speaking of food processors, our next big task will be preparing some salted cabbage. We usually buy a 50 pound bag of cabbage wholesale and then spend an evening chopping cabbage, salting it, squeezing it to make half-a-year's worth of salted cabbage.

I boil pelmeni with spices by Tone's. I like these spices mixes very much for cooking http://www.tones.com/products/tones.php  and especially Spicy Spaghetti Seasoning for pelmeni http://www.tones.com/products/display_product.php?product_id=49

We have the same one - but yesterday my wife had trouble getting the individual pelmyeni to
"pop through" when they were ready. They sort of "stuck" and had to be worked free by hand.

At 55 holes per form - you made many batches to get 1300. My bad. I failed to bond. She made
a few hundred with no help from me. But today I'm off, she's not, and I'm preparing drumsticks
for supper.

Happens all the time. Just means that you put a bit too much stuffing into the mold. Still faster gently pushing them out than making the pelmeni by hand.

You have a bigger die: mine has 37 holes ;) My wife was sore from rolling out dough all day yesterday. If she had done all the work by herself, no quantity of drumsticks would have redeemed me in her eyes  ;)

Had my fill on 7 January. Made by visiting babushka. But in truth my Russian fiance and I are not crazy about them. One of my friends sometimes sneaks in one with a garlic clove inside.

I love pelmeni and this also serves as a fast food for us.  Quick to prepare and much cheaper than McDonalds. There is a Russian babushka near us that sells them for a great price.  We especially like her Vareneki with tvorak.  Great stuff!

After years of trying various sauces on the pelmeni, I like soy sauce or XPEN best

We are not making vareniki yet, but my wife does make her own kefir from a bacterial culture and she then makes tvorog from the kefir.
