Salo (Cured pork fat)

Ingredients:

Water - 1 liter
 Pork fat with layers of meat - 1 kg
 Onion peel - 3 handfuls
 Bay leaf - 2 pcs.
 Garlic - 7 teeth
 Salt - 200 g
 Sugar - 2 tbsp. l.
 Black pepper - to taste


Preparation-boiled:

Add the sugar, salt, bay leaf, onion peel to the water and bring to a boil. Add the fat and allow it to boil for another 30-45 minutes.

Remove the fat from the heat and leave it to soak for 8-10 hours. Then pull the fat from the brine to dry. Once dry, cut garlic into thin slices, then mix with ground black pepper and wrap it in foil or a towel. Put into the freezer overnight.


To have it smoke cured it is more convenient to order from a meat butcher.

This thread is becoming interesting, perhaps we can all add to it with some home recipes.

I will get the ingredients later on from Mrs Shadow, but here some of our New Years dishes that are partially already described earlier.

I present..
1. Salad Olivier (Potato salad)
2, Crab salad
3. Herring in fur coat
4. Holodets (without pork legs)
5. Manti
No it is not a dog. Its really how I look.  ;)

Even while becoming a (self proclaimed) Blini Master, I probably shouldn't give up the day job just yet. Blini are really crepe thin pancakes, a Russian staple. With my new blini tools as shown in the photos, my ability to make them more round, and easy to fold, has improved.

Locals don't use syrup on these, folded inside are things like sour cream, ice cream (chocolate is not a good idea--I learned from experience), salmon, caviar, jam, mushrooms, and other fillings. They are definitely "da bomb!"

To qualify as a card carrying Russkie one must be able to make blini at home although every city and small town has a blini kiosk on every other street corner. This is the original Russian/Ukrainian/Belorussian fast food.
