Mendy's Recipes

For any of you who are reading this and have yet to try one of Mendy's recipes, you are in for a treat.  I am having salmon slices with apples and spices for dinner tonight.  Direct from Mendy's columns.  Have any of you tried any of the recipes that were featured in The Mendeleyev Journal.

I was looking for the precise recipe that I am cooking tonight (I know it by heart) but couldn't find it.   However, I was rewarded with this section of his journal:
