Our version of that is called lardo, its more prized version being lardo di Colonnata (http://en.wikipedia.org/wiki/Lardo) from a small village near Carrara in Tuscany.

Sandro, in Russian lenguage we have the word лярд (lyard) from Latin lardum, in common parlance we call it смалец (smalyets) from Polish smalec and from German schmalz. In Russian it is rendered fat.

You eat that fatback meat like that?  :o
The only way we use it is to season food with when we cook.
My hillbilly stomach would have a faint if I tried to eat that.  ;D

No, in Ukraine, this is pork fat with meat.  Salo, in Ukraine, is pork fat only.  The best is from potato fed pork, or potato/pumpkin.  It is very important to know your "salo supplier".

Ukraine is the 10 largest producer of maize (corn) in the world with a harvest of about 10 million tons.  There is also signifigant but lesser production in the Czech Rep.
