A post in another forum on the board made me think it might be nice to gather a collection of your favorite Russian food dishes - and if possible, the recipes to make them.

For my part, I enjoy hot borscht (not the cold variety), pelmeni, blinchiki (with meat), stuffed cabbage (don't recall the name), and many others. I am not fond of salo - though most every Ukrainian I know loves it. Oh well.

Borscht is wonderful, Salo is the food I don't like.

I didn't like the dried, salt fish or "death fish" as a fellow American calls it.

I would like to try some Borscht recipes and adding chicken.

I am looking for a particular recipe.  I do not know the correct spelling, but it sounds something like cerneike.  I ate it in Ukraine.

It consists of a light crumbly cheese, something like ricotta cheese here in USA or cottage cheese only much drier.  To this cheese is added eggs, flour, sugar, salt and vanilla flavoring.  It is all mixed up and made into something resembling a potato cake and fried in skillet over flame.  Then it is served with honey, yoghurt or something sweet on top.

Can anyone provide me with the correct name and spelling, and a recipe?

Sirniki :

· Ingredients
4 cups cottage cheese
1/2 tsp. white pepper
3/4 cup flour, sifted
4 egg yolks
2 Tbsp. sugar
1/4 tsp. salt
butter for frying
sour cream for serving, well chilled 
 
· Method
Mix together the cottage cheese and the white pepper. Let stand for 15 minutes. Place the cheese in toweling or cheesecloth and carefully squeeze as much moisture from it as possible. Rub the dry cheese through a sieve. In a mixing bowl combine the cheese, flour, egg yolks, sugar and salt. Knead together well and roll into 3" (7 1/2 cm) thick tubes. Refrigerate for about 1 hour and then slice the rolls into 2 1/2 cm. slices.

In a skillet melt 2 Tbsp. of the butter and in this fry the slices until golden brown on both sides, adding butter only if the skillet becomes dry. Serve hot with the sour cream. (May be served as an appetizer or a dessert).

Arrow, when are you going to post your photo in place of that rottweiler?  That way we can help you find a good Western husband for yourself.  Sorry, you won't get to see me because my Russian wife wants my exposure limited at this point.
