As is often the case, Roman Catholic Easter and Easter in the non-Roman world will be celebrated on different dates this year. Those in the Western world are preparing for Easter on April 8 while in the Eastern we will celebrate Easter on 15 April. In some years there is a two week difference, just like the difference of celebrating Christmas on 7 January each year in the East.

Each Easter (as they do in the Nativity Fast before Christmas), you'll find that many individuals and families observe a 40 day fast. The Russian word for a fast is "post" (пост) so if your friend asks you about the "post" during this time of year, you can be sure that she isn't referring to the mail service.

Except in the Muslim Republics, school systems adjusted their menus across Russia, Ukraine, Bulgaria, Moldova, Armenia, Georgia, etc, at the start of 40 days before Easter. Restaurants cut many items from the menu and added "fasting" dishes to their menus to give diners a choice. Supermarkets cut back on meat stocks and bulked up on non-meat items. Unlike the West where establishments are almost oblivious to those who fast, you can see the difference in the Eastern world.

Government offices and military cafeterias generally adapt for the fast at Easter and Christmas. Since some of my meals are taken at the Kremlin, as a Russian Orthodox Christian I'm always interested in the menu during this time of year. Presidential Affairs Minister Viktor Khrekov coordinates meals served at Kremlin, the government house, the Federation Council, State Duma, the Accounting Chamber of the Supreme and Constitutional Courts, and the Central Executive Committee.

The Russian government Lenten menu this year includes: salads, vegetables, various soups, including vegetable soup, soup of cabbage and mushroom soup, steamed vegetables, meatless casseroles, including potatoes with mushrooms and vegetables. Drinks - Preserves and jelly, cranberries, strawberries, raspberries. In total, 40 entree dishes (one for each day of the 40 day fast).

The government creates menus recommended by a committee consisting of Kremlin dieticians and chefs and a council of Orthodox priests. Apparently this is good for the state budget as meatless dishes are inexpensive to produce versus the normal meat menus. Non-fasting dishes are available for those who do not fast.

Last year, the dining rooms of the Kremlin, the government and other government agencies baked approximately 20,000 Easter cakes, more than 3 thousand Passover cakes, and boiled/coloured 24,000 Easter eggs.

Does everyone fast? Of course not. But often those who rarely practice faith become the most strict during the Easter fasting period. Some simply do it for the health advantages.

What makes up a fast? No meat, no eggs, no dairy, no alcohol and on certain days no oil. Fish is sometimes acceptable on certain days. Diabetics typically follow a less strict diet and are allowed fish and eggs for protein. Shellfish such as shrimp are most always okay.

At the Easter weekend on Holy Saturday there is a complete fast--no food eaten at all (diabetics, the elderly and small children exempted).


Recipes for use during the fast:

Салат «Офисный Клерк»/Salad "Office Clerk"




Salad "Office Clerk" uses beets, potatoes, onions and egg (optional)
Note: for those on a strict fast, the egg is optional. For Diabetics, the egg helps replace protein from the lack of meat but first speak to your priest about which practice is best for your situation.


Состав/Ingredients:
300 г картофеля (potatoes)
150 г моркови (carrots)
200 г свеклы (beets)
150 г лука (Onions)
3-5 маринованных огурцов (pickles)
200 г яблок (apples)
3 яйца (eggs)
соль (salt)
Натуральный майонез (Mayonnaise)

Отварить картофель, морковь, свеклу и яйца до готовности. Остудить, почистить. (Boil the potatoes, carrots, beets and eggs until done. Cool, then peel.)

Свеклу, яйца, морковь и картофель натереть на мелкой терке. Огурцы мелко нарезать. Лук мелко нашинковать, залить его кипятком на 10 минут, чтобы он не горчил, затем воду слить. Яблоко почистить, натереть на мелкой терке. (Grate the beets, eggs, carrots and potatoes. Finely chop the pickles. Chop onions, after boiling it for 10 minutes, then drain the water. Grate the apple last.)

На дно тарелки выложить картофель, немного посолить и смазать майонезом. На картофель выложить морковь, немного смазать майонезом. На морковь выложить лук. На лук выложить огурцы, немного смазать майонезом. На огурцы выложить яйца, смазать майонезом. На яйца выложить яблоки, смазать майонезом. (Put the potatoes at the bottom and then add some salt and mayonnaise. Next, layer carrots and a little mayonnaise. Layer carrots with onion. The next layer will be the pickles and mayonnaise. Afterward, layer eggs with some mayonnaise. Next to last, top with apples and mayonnaise.)

На яблоки выложить свеклу. Украсить салат по вкусу. Можно сделать сеточку из майонеза. Желательно дать салату пропитаться. (The final layer is of beets. Create a mesh/lattice by using mayonnaise.)






Fun trivia:

Question: Some FSU Easter eggs are reddish/brown or almost golden. How do they create this unique colouring?

Answer: First a brown onion is placed in boiling water, then eggs are added. The residue from the boiling onion gives the eggs this unique colour.


Question: Tea is the primary beverage in the FSU. However is coffee served in the Kremlin, Government House and Presidential palace cafeterias?

Answer: Yes, but PM Putin does not drink coffee ever. Both President Medvedev and PM Putin are served beverages and meals from special thermo sealed containers under constant supervision by the FSB and/or Presidential Protective Service. Tea for both men is poured from sealed containers separate from tea served to any other guests present at a meal or function or meeting.


Question: What is the Russian word for Easter?

Answer: There isn't one. Russian uses the Greek term for Easter, Пасха which sounds like "Pahsh-ka."


Question: Do Russia's top two leaders observe the Orthodox 40 day Easter fast?

Answer: Yes, both observe strict fasts at both Easter and Christmas except for meals with other heads of state. The Orthodox faith allows for temporary deviation from a fasting regimen during times of travel or when entertaining guests.



Question: How many service workers prepare meals inside the Дворцовая кухня Кремля (Kremlin Palace Kitchen)?

Answer: The ultimate number depends on who is on the Kremlin grounds. Normally neither President Medvedev or Prime Minister Putin work inside the Kremlin except for special events and meetings of State. There are 30 chefs under Executive Mikhail Zhukov and over 400 cafeteria workers, depending on the number needed any given day.


Kremlin Palace recipe for salad Дальневосточный ("Far East"):
Cook potatoes, onions and green peas. Chop potatoes into small cubes.

Add radishes and sauerkraut, cutting the radishes into round slices. Add chopped cabbage.

Slice the onions into thin strips. (During non-fasting periods the chef adds eggs, finely chopped). Mix the peas and add salt with a dash of sugar for taste. Lightly season with vegetable oil.

President Medvedev has made a tradition of hosting state award winners for a lunch each year at Women's Day.



The Easter fast is observed and this year the meal was served in the informal dining room at the Presidential Residence in the Gorki region outside Moscow. The menu included soup, salad, bread, cake and fruit.

We really like the blog Natasha's Kitchen for tips on colouring Easter eggs in the Russian and Ukrainian style. Her easy instructions make it look so fun and simple.

We also recommend this recipe for Ukrainian/Russian Easter bread (called "kulich") from the pages of Russianseason, another food blog operated by a mother/daughter and they know how to cook! This is one of the best recipes we've found.

* This will make 3 medium-sized Kulichi (13cm height, 9cm diameter).

Dough ingredients:
4 1/4 cup (500 grams) wheat flour
 3/4 cup (170 grams) sugar
 4 tbsps (40 grams) fresh yeast
 1/2 cup (120ml) milk, lukewarm
 1/2 cup (120ml) cream
 1/2 cup (120 grams butter), room temperature
 2 egg yolks
 1/4 tsp salt
 1/4 tsp ground nutmeg
 1/4 tsp ground ginger
 1/2 tsp ground cardamom
 A tiny pinch of ground cloves
 A small bag of vanilla sugar
 1/2 cup (50 grams) golden raisins
 3/4 cup (150 grams) dried apricots
 1/2 cup (75 grams) almonds

Icing ingredients:
2 egg whites, chilled
 1 cup (125 grams) powder sugar
 1 tsp lemon juice
 1/2 cup (75 grams) diced roasted walnuts

Combine yeast, milk, cream, and 1/3 of the flour. Cover the dough and let it rise (it will rise quickly, in about half an hour).

In the meantime, blend egg yolks, sugar, vanilla, and butter until pale and smooth.

When the first dough has risen (you will notice some bubbles and cracks on the surface), add in salt, the egg yolk and butter mix, and spice. Mix together and add in the remaining flour. Knead the dough until it is smooth and doesn’t stick to the hands.

Cover the dough and leave it to rise in a warm place. It might take 2 to 4 hours, depending on temperature and ingredients.

When the second dough has risen, add in diced apricots, raisins, and peeled almonds (scald them so that the skins will come off easily).

Grease tall cylinder-shaped baking forms with butter and place the dough into the prepared forms. The dough should take about only ½ of the space in the form as it will rise significantly. Leave the dough in the molds to rise for about 15 minutes.

Bake at a low heat for an hour (325 F).

Russian Easter tips to get the most from your Russian Easter experience:
- Fast (no meat, no dairy, no alcohol) for the 40 days prior to Easter.

- Assemble a basket of food to take to church blessing by the priest. Most baskets include items which were forbidden during the fast, bread, cheese and a bottle of wine.

- Attend the "Paskha" (Greek word for Easter) service at an Orthodox Church. This service begins on the Saturday night before Easter and continues several hours past midnight.

- Learn some Easter phrases in Russian. We have a page on the Mendeleyev Journal to help you with Easter terms in Russian.

- Russian Easter as in earlier times follows Passover. When the Roman Catholic Church changed the formula for calculating Easter in the Western half of the world, churches in the Eastern half of the world did not change. Easter in the Eastern world this year is Sunday, 15 April, a week after Roman Catholic Easter in the West.

Easter is just a week away, 15 April in the Eastern part of the world, and orders for Easter cakes are coming in fast according to Moscow Trade Service Department director Mikhail Orlov who says that Moscow bakeries and confectioner's workshops have received orders for 900,000 Easter cakes. Speaking at a press conference on Friday, Mr. Orlov told the Interfax-Religion news service that over 340 tons of flour would be used in baking the cakes.


Orlov estimated that about 90 million eggs will sold by Moscow shops to customers during the holidays. In cooperation with the Orthodox Church, over 500 free dinners and tea parties will be served to low income residents and over 50 thousand low income citizens, disabled persons, and war veterans will receive free Easter cakes as part of the charitable program.



Named "Kulich" the cakes are also sometimes called Pashka (after the Greek word for Easter) and contain flour, cottage cheese, butter, chopped candied fruits and rinds, vanilla extract, and heavy cream.

Today is "Pussywillow" Sunday in the FSU. In most areas of the FSU palms are something not available locally so local residents use the pussywillow instead for celebration of Palm Sunday.







Today you would have found individuals and kiosks selling pussywillows on many street corners and certainly within walking distance of most churches.

Women cover their heads with scarfs and men generally wear long sleeve shirts. Revealing clothing is generally not acceptable in a Russian church.

Today is cleaning day in the FSU.

There is a term for it, "Clean Thursday" and this entire week has been "Clean Week." On Clean Thursday it is proper to clean your house, yard and yourself. On Friday you are not supposed to eat, work or listen to any kind of music.”

On Saturday you fast from Noon to Sundown. The Resurrection liturgy begins in the late evening (11pm or midnight usually) and lasts to 3 or 4 AM the next morning.


Easter (Православная Пасха = Orthodox Paskha)



Interior of the main chapel of the largest Orthodox church in the world, Moscow's Cathedral of Christ the Saviour. It was blown up at the order of Joseph Stalin but rebuilt to exact specifications after the fall of the Soviet Union. It is considered to be the main church of Russia.

Пасха ("Pashka") is the Greek word that Russians use to call Easter, the single most important day in the Orthodox calendar and what makes it really special is the over 1,000 year history of Christianity in Russia.  Important traditions are celebrated in the various regions of Russia, Ukraine and Belarus during this holy holiday.

Yesterday was Good Friday in the Eastern world and during Friday afternoon services an icon or embroidery of the Shroud is placed in the centre of the church to remind believers of the Passion of Christ. The shroud remains there until the beginning of Saturday night/Sunday morning Easter liturgy.
 


Holy Friday is the most sorrowful day of Holy Week because of the Biblical story of Easter with Christ the Saviour crucified by death on the cross to save people from sin. During the pre-Easter period Christians have fasted for 40+ days to recall the 40 days Jesus spend in the wilderness before being nailed to a cross. Fasting helps believers prepare for the celebration by helping believers crucify the flesh and fallen nature.

Holy Friday follows the week of Lazarus Saturday, commemorating the raising of Lazarus of Bethany, on the day before Palm Sunday. Lazarus Saturday begins Holy Week, the last week of the fasting period. Holy Week lasts until the night prior to Easter Sunday when Orthodox Christians begin to celebrate the Resurrection of Christ.

I want to show you something that happened in Moscow. A group of Christian youth led by a priest stage a Easter "flashmob" in the middle of a street.

Watch how the crowd grows and people join in singing the familiar refrain from the Orthodox liturgy there on the street. A sidewalk folk band even joins in! More people join in.

"Christ is risen. He is risen indeed!"

We at the Mendeleyev Journal must admit that many at the Easter celebration at Moscow's Christ Cathedral were watching body language, smiles, etc. In his last year of office as President of Russia, Mr. Medvedev attended the midnight Easter vigil at Russia's main Cathedral of Christ the Saviour in Moscow. Along with the president were his wife Svetlana Medvedev, and the couple was accompanied by Prime Minister and president-elect Vladimir Putin and Moscow Mayor Sergei Sobyanin.

Often a driving force in his campaign in 2008, Mrs. Medvedeva seemed somber, Prime Minister Vladimir Putin seemed himself, and Moscow Mayor Sergei Sobyanin seems to be growing in influence within the circles of power.

After the service President Medvedev expressed his wishes for Russian Christians by saying, “I sincerely wish all of you a Happy Easter!

The Holy Easter holiday has great moral significance. It fills the hearts of millions of believers with joy, hope and a sincere desire to do good deeds.

The Russian Orthodox Church plays a major role in bringing people together around common spiritual values. Today, in close cooperation with other faiths, community organizations and the government, it is doing much to strengthen civil accord and moral principles, support the institution of family, protect motherhood and childhood, and educate young people in the spirit of patriotism and respect.

I wish happiness, peace, and all the very best to Orthodox Christians and everyone celebrating Easter.”
