I had thought this was more a 'Pacific' influence more so than Spanish, as Hawaiians/Samoans do the same thing except they dig a hole in the ground, lay the pig down, then cover it in leaves and coals...

Traditional during the Christmas holidays is the slaughter of the pig, preparing it and cooking it in the spit.

Our family did a few of them when we visited my great-grandparents out in their hacienda. I remember spending the whole night taking turns with the handle rotating the pig over the hot coals. We would spend the night drinking and telling stories and catching on with what was happening. By early morning we were useless, BUT the pig was ready after almost 24 hours on the spit.

There is a location in the mountains of PR that have open-air eateries at every turn selling the Lechon Asao.

That's awesome! I remember the rituals very well as a kid during such festivities. I was as much surprised when I first went to Russia and saw they also eat those dried fish, which is called 'Daing' in Tagalog. Kim Chee, too.

I admit my wife loves eating Filipino food. Lechon being one of them, or Krispy pata. Her favorite appetizer is Chicharon Bulaklak. She makes Kare-kare and Chicken Adobo at home, too. I don't even know how make these but somehow she found out how and had been cooking these at home now and then.

Her favorite desserts are Ube Ice Cream and Buko Pandan.

We have a trip to Boracay scheduled for this winter and what I would like to for her to taste are the exotic fruits in the Philippines. They'll be nothing she had ever tasted before. When we were in Hawaii with my in laws and her sisters last, I took them along north shore to meet some local folks so they can taste some of the exotic fruits on the islands. It's fine but not nearly close to what's available in PI. She likes lanka (jackfruit) and lychees. Popski was crazy about the coconut drinks and mangoes and those tiny bananas....

But there are hundreds more...

The resorts in Cebu is mostly frequented by Euros and Aussies, so you'll likely be in good company. Try to stay in one of those nipa huts in knee-deep water about hundred yards from the shore. The sea breeze at nights along with the water rippling in the playas ought to be a great experience...they don't have doors. Just sheer linens...

I'm not sure if Inosanto still have dojos or studios there, but that's good to learn. I think they even do some of the movements underwater which is suppose to heighten your flexibility and reaction.

If we happen to meet there, I'll take you on some wild surfing spots...

As for the food, take it slow. If someone offers you 'balut', don't. Unless you're either nuts or just plain drunk as a sailor.

btw- the fruit I miss the most is Chico, Duhat and Lanzones, and one I don't even remember the name of but will do once I see it again. Awesome fruits, man.

It was killing me, so I looked...'Atis' or Sugar Apple (apparently) in English.

Wow, I didn't even know Inosanto had schools there.  It must be a thing of the past since I haven't come across any schools from my research. 
I was looking at pekiti tirisa in Manila.  They train 3 days a week but I think I could get some additional training. 


The whole history behind Kali and the different styles is really interesting. 


I have been wanting to get my hands on the Eskrimador documentary. 


Yeah, no Balut for me.  haha   I guess they have different stages of Balut from where you think your eating a regular egg all the way to crunchy bits. 
I have a hard time eating a lot of fat due to texture so I can only imagine trying to get down one of those. 


I'll shoot you a pm when I know my travel plans.  Hopefully we can at least meet up for beer.

I think Danny had been living here in LA since they made the Game of Death movie. Local boy made good.

I can't even tell you who teaches and where these dojos are anymore as it's been so many years for me.

Not too long ago, they actually held an underground actual Kali fest here in LA. You just get roughed up in full attack, no holds barred skirmishes. It used to be in Chinatown and Redondo. It's outlawed now though.

Kali training is pretty demanding. So you have my sympathy. Fight Quest recently did a taping of two American martial artists who took a crash training there. LOL, I think it's way too over-dramatized, but sort of gives you an idea.

Isn't that soursop or 'guanabana?' My favorite. Our last trip to PR this summer my cousin walked us to an empty lot next to his house and we picked a few of them. My wife had never seen them in the 'raw' so I cut open one of them and asked her to try it. She was thrilled to finally find out where this 'nectar of the gods' comes from. Another of her favorites is Passion Fruit or 'parcha.'

What do you call chicharon? We spell it with two 'Rs'. Is it the skin very crispy?

In the PI, it is spelled 'guyabana', but no, it isn't the same as 'atis'. Atis doesn't come as big and the outer scaly skin is more of that 'honeycomb' type of protrusion, while the 'guanabana' ('guyabana') have the slighter, almost black 'pin-point' protrusion on the skin layer. But yes, that, too is one delicious fruit. They make a helluva juice.

Your 'acerola' is actually called 'aratilis' in Tagalog. IINM, it's mainly some form of 'wild berries', or at least that's what I think it is. They grow anywhere and everywhere. As kid, we'd climb these trees while walking to/fro school as they seem to be everywhere. When they ripen in that bright red colored hue, they are hard to miss from the distance; come 'pick' me fruit  :P


Some of the Spanish words used in Tagalog have had some weird influence and/or mix with native tongues. So the spelling have had a few modifications. IINM, the Tagalog alphabet consist of 'letters' like 'ng', so some variations from the 'Spanish' alphabet...Having said that, I don't doubt about that 'slight' differences. Don't quote me on this but I don't believe there's double 'RR' uses in Tagalog.

To be perfectly honest, I'm not sure if 'chicharon' means 'skin' or 'deep fried' as the word can actually be preceded / superceeded by other words. For instance, they'll say 'chicken chicharon' which would be deep fried chicken skin, or that 'chicharon bulaklak', (bulaklak actually means 'flower'). That's actually deep fried 'intestines'. It's cut-up in small section and when deep fried, the edges flair out like a blossoming flower. Hence the name. But I think the most popular of them all is the usual 'pork rind' that we call here. Normally they're referred to only as 'chicharon'. Perfect with a nice cold beer on a hot day.

Parcha takes a lot of work to prepare as juice, but it is worth the effort.

They grow on vines similar to a combination of Morning Glory and Clematis. Every cyclone fence in the island is literally covered with the fruit. Excellent mixer too. Great for the heart.

Movie? Not really. Rated 5.9 on IMDb and that is too generous rating in my opinion. Of course well made and well played but not something that I would suggest anyone waste time to watch.
